Baked Avocado Fries With Chipotle Dip

Ingredients:

2 Large Avocados sliced

1 Lime

Salt & Pepper

1 Egg

1/4 Cup Flour

1 Cup Panko Bread Crumbs

Oil or NonStick Spray

Homemade Chipotle Dipping Sauce. Recipe to Follow


Instructions:

1. Preheat oven 400 Degrees

2. Oil or spray cookie sheet

3. Squeeze Lime juice over sliced avocaods

4. Season with salt and pepper (I use the salt, pepper, red pepper mix for a little extra kick)

5. Dip avocados in flour to coat, then in egg and finally in the panko crumb

(The more panko you use the more crunch and crispy your fries will be)

6.Place on cookie sheet evenly spread out and spray with non-stick spray before placing in oven.

7. Bake your fries for 15 minutes or until golden brown

8. Serve with my Chipotle dip

Chipotle Dip Recipe:

1. Chipotle Chile in adobo sauce plus 1-2 Tsp sauce

1/2 Cup Mayo of your choice

1/3 Cup plain greek yogurt

(I used honey because that's what I had)

1/4 Cup chopped cilantro

(Dried would work too but I love the fresh taste)

1/4 tsp Ground cumin

Salt and pepper to taste

Place all ingredients in a food processor or blender (I use my Ninja) and puree until smooth, about 2-3 minutes or until the mixture is nice and creamy. Pour into a jar or container and refrigerate (sprinkle extra cilantro on top of dip and serve with fries). Enjoy for 3-4 weeks.
